Ingredients for Sauted Oysters Recipe

  • Put
  • 1 pint oysters in strainer over a bowl and over them pour

Instructions

  1. 4 tablespoons melted butter or cooking oil.
  2. When brown on one side turn and brown the other side.
  3. Cover
  4. 8 slices of toast, cut in three strips each, with
  5. Celery sauce, and serve an oyster on each piece of toast.
  6. CELERY SAUCE
  7. Separate stalks from
  8. 2 roots celery and wash thoroughly.
  9. Cut lengthwise and crosswise in small pieces.
  10. There should be 1 1/3 cups.
  11. Put in saucepan with
  12. 3 cups water and
  13. 1 teaspoon salt and cook 20 minutes or until tender.
  14. Drain, reserving both liquid and celery.
  15. To
  16. Liquid add
  17. Chicken stock to make 2 cups or
  18. Water to make 2 cups and
  19. 1 chicken bouillon cube.
  20. Melt in saucepan, chafing dish or electric grill
  21. 3 tablespoons butter.
  22. Add
  23. 3 tablespoons flour mixed with
  24. 3/4 teaspoon salt and
  25. 1/8 teaspoon pepper.
  26. Stir until smooth and add the
  27. 2 cups celery water and chicken stock.
  28. Stir and boil 1 minute.
  29. Add
  30. Cooked celery and bring to boiling point.
  31. Mix
  32. 1 egg yolk and
  33. 2/3 cup cream.
  34. Add to first mixture and cook 2 minutes over hot water, stirring constantly.
