Salt Codfish Balls Recipe

Instructions

  1. Put the codfish in cold water and let it come to a boil; then pour off the water, cover with fresh boiling water, and simmer slowly until tender.
  2. Remove the bones and mince the fish fine.
  3. Boil potatoes and mash while hot, beating them until light and smooth, as if to be served alone.
  4. Add butter, pepper, and a little milk or cream.
  5. Use 1 cup of minced fish to 2 cups of mashed potatoes; mix well and add enough well-beaten egg to bind, and have the mixture just moist enough to make into balls.
  6. Form into round balls two inches in diameter, and fry in a basket in deep, hot fat until a rich brown.
  7. Serve with these steaming hot Boston brown bread, kept hot in a steamer and sliced at the last moment.
