Salt Cod With Tomatoes Recipe

Instructions
- From the center of a thick salt cod take a piece weighing about a pound, wash and soak for eighteen hours in cold water, changing the water twice.
- Cover with fresh cold water, heat slowly and keep at a temperature just below the simmering point for two hours and a half.
- Put a tablespoon of butter which has been rolled in flour, in a frying pan, add two tablespoons of chopped onion, and cook slowly until the onion is a pale yellow color.
- Add two cups of strained canned tomatoes, simmer for ten minutes, add the drained fish and place on the back of the range for thirty minutes.
- Dust lightly with pepper when it is ready for the table.
