Instructions
- Wash, scrape and put the salsify in cold water to prevent discoloration; cut in inch lengths, cook in boiling salted water until soft, then drain.
- Mash and season with butter, salt and pepper.
- Shape in small flat cakes, roll in flour and saute in fresh butter, browning first one side and then the other.
