Salsify Fritters Recipe

Instructions

  1. Wash, scrape and put the salsify in cold water to prevent discoloration; cut in inch lengths, cook in boiling salted water until soft, then drain.
  2. Mash and season with butter, salt and pepper.
  3. Shape in small flat cakes, roll in flour and saute in fresh butter, browning first one side and then the other.
