Ingredients for Salmon With Celery And Anchovies

  • 2½ pounds salmon, cut in 4 slices
  • ½ stalk celery, washed, chopped fine
  • ¼ cup anchovy filets, chopped
  • 3 tablespoons butter
  • 1 onion, peeled, chopped fine
  • ½ cup water
  • Seasonings to taste

Instructions

  1. Boil celery in salted water for about 5 minutes.
  2. Drain off water.
  3. Put salmon in a buttered baking pan.
  4. Season.
  5. Add the water, butter, celery, onion and anchovies.
  6. Bake in moderate oven for about 20 minutes.
  7. Then serve.
