Ingredients for Rotel Chicken Recipe
- 4-5 chicken breasts
- 1 lb Velveeta or similar processed cheese, chunked
- 1 bell pepper
- 1 onion
- 1 can of mushrooms
- 2 cans Rotel tomatoes
- 1 tablespoon butter
- Fresh garlic to taste
Instructions
- Preheat your oven to 325 degrees.
- Dice the onion and bell pepper while broiling the chicken.
- Slice the chicken into bite-size pieces.
- Melt the butter in a frying pan and add the garlic.
- Stir in the onion and pepper and saute until soft.
- Add cheese, tomatoes, and mushroom to the pan.
- Increase heat, stirring until cheese is melted.
- Place in a casserole dish along with the chicken .
- Bake for 30 minutes.
- Serve over spaghetti.
