Ingredients for Rose Apples En Surprise Recipe

• 2 hard boiled eggs
• 2 tablespoons green pepper, chopped
• 2 tablespoons pimiento, chopped
• 4 anchovies, chopped
• 1/2 teaspoon salt
• Few drops onion juice
• 2 tablespoons mayonnaise
• 8 rose apples or small tomatoes from which centers have been removed
• Anchovy strips
• Copped parsley

Instructions

1. Cool hard boiled eggs. Reserve 1/2 yolk but chop the remainder fine and mix with

green pepper, pimiento, and anchovies.

1. Mix salt, onion juice, and mayonnaise dressing.
2. Fill apples or small tomatoes with egg and pimiento mixture.
3. Cover with mayonnaise and garnish with strips of anchovy, laid crosswise.
4. Mix remaining egg yolk with chopped parsley and rubbed it through a strainer. Sprinkle over the apples.
