Ingredients for Root Veggie Casserole Recipe

  • 3 cups apple cider
  • 1 cup semi-sweet white wine
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 1/4 pounds carrots
  • 1 1/4 pounds sweet potatoes or yams
  • 1 1/4 pounds parsnips
  • 1 1/4 pounds white turnips
  • 1 1/4 pounds yellow turnips
  • Salt and pepper

Instructions

  1. Boil cider and wine in heavy saucepan until reduced to about 3/4 cup, about 30 minutes.
  2. Whisk in butter.
  3. Peel and cut vegetables into 1/2 inch pieces. Place veggies in large roasting pan, spreading into an even layer.
  4. Drizzle with olive oil and pour cider-wine mixture over vegetables.
  5. Lightly salt and pepper and toss to coat.
  6. Roast at 425 degrees until veggies are tender and golden with crisp edges. This should take about 40 minutes.
