Ingredients for Root Veggie Casserole Recipe
- 3 cups apple cider
- 1 cup semi-sweet white wine
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 1/4 pounds carrots
- 1 1/4 pounds sweet potatoes or yams
- 1 1/4 pounds parsnips
- 1 1/4 pounds white turnips
- 1 1/4 pounds yellow turnips
- Salt and pepper

Instructions
- Boil cider and wine in heavy saucepan until reduced to about 3/4 cup, about 30 minutes.
- Whisk in butter.
- Peel and cut vegetables into 1/2 inch pieces. Place veggies in large roasting pan, spreading into an even layer.
- Drizzle with olive oil and pour cider-wine mixture over vegetables.
- Lightly salt and pepper and toss to coat.
- Roast at 425 degrees until veggies are tender and golden with crisp edges. This should take about 40 minutes.
