Roasted Chicken Recipe

Ingredients for Roasted Chicken Recipe
- 1 4-pound chicken
- Juice from 3 lemon wedges
- Salt and pepper to taste
- 4 tablespoons butter, more may be needed
- 1 small onion, quartered
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- 2 sprigs fresh parsley
- 1/4 cup melted butter
Instructions
- Preheat oven to 350°.
- Clean out inside of chicken and use a pastry brush to spread the lemon juice on the inside.
- Place the onion and herbs inside the chicken and baste the outside with butter.
- Put the whole chicken in a roasting pan.
- Roast for at least 1 hour and 15 minutes.
- During roasting, baste the chicken with melted butter.
- Test the chicken with a meat thermometer and make sure it's at least 175 degrees.
- Season the chicken with salt and pepper to taste.
