Ingredients for Rissoles Of Beef Recipe
- 1 pint leftover cold steak or roast beef
- 1 tablespoon melted butter
- 1 pint fine bread crumbs
- Milk or cream, enough to moisten
- Salt and pepper, to taste
- A dash of cayenne
- 1/2 teaspoon onion juice
- 1/2 teaspoon kitchen bouquet
- 1 beaten egg
- Shortening and clear beef drippings for frying
- Flour

Instructions
- Trim off and discard all bits of gristle and leave very little, if any, of the fat. Chop the meat very fine.
- Add the fine bread crumbs, butter, and milk or cream.
- Season well with salt and pepper and add the cayenne, onion juice, and kitchen bouquet.
- Add egg and mix well together. If not moist enough, add a little more milk or cream.
- Make into balls the size of eggs and roll them in a little flour.
- Fry in a frying-basket in deep hot fat: 1/2 shortening and 1/2 clear beef drippings is best.
- When nicely browned, drain on a sheet of brown paper in an hot oven, around 400 degrees.
- Pile them in the center of a platter and serve with a border of sliced tomatoes with a spoonful of mayonnaise in the center or with slices of boiled beets.
