Ricotta Filling for Cannoli

• 2 cups ricotta cheese
• 1/4 cup chocolate chips, bitter sweet
• 1/2 cup confectioners sugar
• 1/4 tsp. vanilla
• Dash cinnamon

1. Strain ricotta to remove excess liquid.
2. Place cheese in a bowl and add the chocolate, sugar, vanilla, and cinnamon.
3. Stir together gently.
4. Let rest in refigerator until ready to use.
