Rice Griddle Cakes Recipe 2

• 1 cup white flour
• 1½ cups rice flour
• 1 egg, beaten
• 1 cup milk
• 1 tablespoon shortening, melted
• 3 teaspoons baking powder
• Pinch of salt

1. Mix together white and rice flours, baking powder and salt.
2. Stir in milk, well beaten egg and melted shortening.
3. Mix and beat well.
4. Cook on slightly greased hot griddle on both sides.
