Ingredients for Rhubarb Pie, No. 4 Recipe
- Rhubarb (quantity varies based on how thick you want your pie)
- 1 C sugar
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1 Tbsp. lemon juice OR 1 orange - rind only
- Pastry crust

Instructions
- Peel the rhubarb and cut it in slices; cover with boiling water, set over the fire and bring quickly to the boiling point.
- As soon as the rhubarb changes color and before it loses its shape, drain and press out all of the liquid.
- Over the rhubarb sprinkle sugar sifted with flour and salt.
- Add lemon juice or orange rind; mix and turn into a plate lined with pastry; finish with bands of pastry.
- Bake about half an hour at 350 degrees.
