Ingredients for Rhubarb Pie, No. 4 Recipe

  • Rhubarb (quantity varies based on how thick you want your pie)
  • 1 C sugar
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice OR 1 orange - rind only
  • Pastry crust

Instructions

  1. Peel the rhubarb and cut it in slices; cover with boiling water, set over the fire and bring quickly to the boiling point.
  2. As soon as the rhubarb changes color and before it loses its shape, drain and press out all of the liquid.
  3. Over the rhubarb sprinkle sugar sifted with flour and salt.
  4. Add lemon juice or orange rind; mix and turn into a plate lined with pastry; finish with bands of pastry.
  5. Bake about half an hour at 350 degrees.
