Raspberry Cream Salad Recipe

Instructions

  1. Mash to a cream 1/2 Neufchatel cheese, add 1/4 of a saltspoonful of mustard and pepper, 1/2 saltspoonful of salt, and 1/2 teaspoon of lemon juice; mix well and add 1/2 cup of rich cream.
  2. Stir until smooth and add 1/2 cup of pure raspberry juice.
  3. Make nests of white, crisp lettuce, put 1 spoonful of raspberries in each, and pour around them the cream dressing.
  4. Serve very cold.
