Ingredients for Raised Waffles Recipe

  • 1 3/4 cups milk
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1/4 yeast cake dissoved in water
  • 1/4 cup lukewarm water
  • 2 cups flour
  • 2 eggs, yolks and whites separated

Instructions

  1. Scald the milk and add the salt, butter, and, when lukewarm, add yeast cake dissolved in water, and flour.
  2. Beat well. Let rise overnight.
  3. Add well-beaten yolks and stiffly-beaten whites.
  4. Put a tablespoon of mixture in each waffle iron near the center, cover, and mixture will spread to just fill iron.
  5. If sufficiently heated, it should be turned almost as soon as filled and covered.
