Ingredients for Ragout Of Beef Recipe

  • Slices of cold roast or boiled beef
  • 3 small onions for each pound of meat
  • Salt and pepper
  • A pot of boiling water
  • 1/2 cup of tomatoes
  • 1/2 cup of chopped mushrooms
  • A few pickled walnuts or capers
  • 1/2 teaspoon of curry powder
  • 1 tablespoon of flour, mixed with water until smooth

Instructions

  1. Put in a stewpan slices of cold roast or boiled beef.
  2. To each pound of meat, add 3 small onions, salt, and pepper.
  3. Cover with boiling water and simmer two hours or more, or until the meat is so tender as to fall readily to pieces.
  4. Add tomatoes, chopped mushrooms, walnuts or capers, and curry powder.
  5. Mix flour with water until smooth. Add a little of the hot liquid and stir well; pour into the hot ragout, and cook ten or fifteen minutes longer.
  6. Serve with mashed potatoes.
