Queen Fruit Sauce Recipe

Ingredients for Queen Fruit Sauce

  • 1/3 cup light-colored fruit juice (pineapple or orange)
  • 2 tablespoons lemon juice
  • 3 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 egg yolk
  • A few grains of salt

Instructions

  1. Put the juices into a small saucepan and bring to a boil.
  2. Mix the starch with the sugar, and add enough of the fruit juices to mix smooth.
  3. Beat the yolk slightly and add to the sugar and starch mixture.
  4. Then pour in gradually the hot liquid, stirring meanwhile.
  5. Continue to stir on the edge of the stove until it thickens slightly, but do not boil.
  6. Add the salt and let cool.
  7. NOTE - Slightly whipped cream, in the proportion of 1/3 cream to 2/3 sauce, added to this sauce when cold, is excellent.
