Ingredients for Queen Fruit Sauce Recipe
- 1/3 cup light-colored fruit juice (pineapple or orange)
- 2 tablespoons lemon juice
- 3 tablespoons sugar
- 1 teaspoon cornstarch
- 1 egg yolk
- A few grains of salt
Instructions
- Put the juices into a small saucepan and bring to a boil.
- Mix the starch with the sugar, and add enough of the fruit juices to mix smooth.
- Beat the yolk slightly and add to the sugar and starch mixture.
- Then pour in gradually the hot liquid, stirring meanwhile.
- Continue to stir on the edge of the stove until it thickens slightly, but do not boil.
- Add the salt and let cool.
- NOTE - Slightly whipped cream, in the proportion of 1/3 cream to 2/3 sauce, added to this sauce when cold, is excellent.
