Instructions

  1. Boil peas as per previous recipe; when tender, drain and dredge through a sieve; melt 1 tablespoon of butter; sift in 1 tablespoon of flour, stir in and season with salt and pepper.
  2. Stir in 3/4 cup of 1/2 milk and 1/2 cream, and beat until very light.
