Puree Of Brown Beans Recipe

Instructions

  1. Wash 1 cup of brown beans, add 1 medium onion cut in pieces, 2 carrots left whole, 3 stalks celery, 2 teaspoons salt, 1-1/2 tablespoons vegetable butter, 8 cups water and let boil continuously until the beans are well done.
  2. Add 1 outer slice from a loaf of stale bread, and 1 large tomato cut into quarters, and let continue to boil for 15 minutes.
  3. Add more hot water if necessary.
  4. Remove the carrots, and mash all the rest through a colander.
  5. Reheat, salt to taste and serve with bread croutons.
  6. Add a little cream or canned milk if desired.
  7. Puree of Lentil Soup
  8. Prepare and cook the same as puree of brown beans, using 1-1/4 cups lentils in the place of 1 cup of brown beans.
