Ingredients for Puffy Omelet Recipe

  • 4 eggs, separated
  • 2 tablespoons water
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Beat yolks light and add water and seasoning (a pinch of baking powder added to the yolks will keep omelet from falling).
  2. Fold this into the well-beaten whites.
  3. Heat butter in a sauce pan until melted and add egg mixture.
  4. Cook until eggs are set.
  5. Grated cheese can be sprinkled when folded for platter.
  6. Always cut edges when ready to fold.
  7. This omelet may be served with minced bacon, parsley, thin slices of ham, or mushrooms.
