Ingredients for Prune Pie

  • 1 cup cooked and pitted prunes
  • 1 lemon, juice and grated rind
  • 1 cup water or juice
  • 1 tablespoon flour
  • ½ cup sugar
  • 2 tablespoons butter

Instructions

  1. Cook the prunes with the other ingredients until slightly thickened.
  2. Add a little cinnamon or nutmeg, if desired.
  3. Bake between two crusts.
  4. Shredded coconut may be added to the filling, for variation.
  5. Prune pie is delicious served with ice cream or whipped cream.
  6. This amount makes a small pie.
