Ingredients for Princess Soup Recipe

  • 1 cup sorrel
  • 1 tablespoon olive oil (or other vegetable oil)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon tarragon
  • 1/2 teaspoon white wine vinegar
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 1 pint hot water
  • 1 quart white stock
  • Nutmeg
  • Red pepper
  • 1 egg
  • 1 cup cream

Instructions

  1. Chop the sorrel very fine and cook in olive oil.
  2. Add sugar, tarragon, white wine vinegar, salt, and flour. When boiling, add 1 pint hot water.
  3. Cook for 1/2 hour, then add white stock, a grating of nutmeg, and a dash of red pepper.
  4. Bring to a boil and add beaten yolk of 1 egg.
  5. Cream and serve.
