1. Do not try to make candy on a humid day; the results will be unsatisfactory and it may not be possible to make the candy.
2. If the day is slightly rainy or foggy, do not try to use chocolate, either.
3. White cane sugar is better in candy making than brown sugar.
4. In cooking candies to a high temperature the stirring must be constant during the last part of the cooking.
