Potatoes Au Gratin Recipe

Instructions

  1. 2 tablespoons of butter; 1 pint baked potatoes; 1 tablespoon of flour; 1/3 cup grated cheese; 2 cups of milk; 1/2 cup fine bread crumbs; yolks of 2 eggs; seasoning.
  2. Melt the butter, then add the flour, and boil for a minute.
  3. Stir in the milk until the sauce thickens perfectly smooth.
  4. Add the seasoning and the beaten eggs.
  5. Slice the potatoes and place in a deep baking-dish.
  6. Pour the sauce over them, then sprinkle over the top the grated cheese and the bread crumbs.
  7. Brown lightly in a hot oven for ten minutes.
  8. Serve at once.
