Ingredients for Potato Salad

  • 1½ cups of cold, boiled potatoes cut in half-inch cubes
  • 2 tablespoons of mustard pickles or piccalilli, chopped
  • ½ teaspoon of salt fine
  • ¼ to½ teaspoon of paprika or 2 to 3 tablespoons of vinegar
  • 4 to 6 tablespoons of oil
  • 1 slice of red or green pepper, when desired chopped fine
  • 2 hard-cooked eggs, chopped fine or½ cup of sardines, picked in bits, or½ cup of anchovies, picked in bits
  • 1 slice of onion, chopped fine
  • 2 tablespoons of capers, chopped fine
  • 2 tablespoons of parsley, chopped fine

Instructions

  1. Sprinkle the salt over the potato and mix thoroughly; then add the chopped ingredients and mix again; add the oil and turn the potato over and over until the oil is taken up; then add the vinegar and turn the ingredients again.
  2. Cover and set aside in a cool place until ready to serve.
  3. This salad should stand some time after mixing before it is served.
  4. When adding eggs, sardines or anchovies add them with the chopped ingredients.
