Ingredients for Potato And Nut Salad

  • For Dressing
  • 5 tablespoons melted vegetable shortening
  • 1 teaspoon mustard
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 2 yolks of eggs
  • ¾ cup cream or milk
  • ¼ cup vinegar
  • For Salad
  • 3 cups sliced cold potatoes
  • 1 cup broken hickory nut meats
  • 1 teaspoon chopped onion
  • Chopped parsley
  • Cold cooked sliced beets
  • Sliced lemon
  • Lettuce leaves

Instructions

  1. For dressing.
  2. Mix sugar, salt, and mustard, add vegetable shortening and stir thoroughly; then add yolks of eggs well beaten, cream, and lastly vinegar.
  3. Cook in double boiler until consistency of cream.
  4. If milk is used instead of cream, add 1 teaspoon flour to other dry ingredients.
  5. For salad.
  6. Mix potatoes, nuts, and onion together, and place on crisp lettuce leaves; pour over dressing and garnish to taste with beets, lemon, and parsley.
