Potato A La Parisienne Salad. Recipe

Instructions

  1. Four or six potatoes, mayonnaise dressing, parsley, two beets.
  2. Pare and cut the potatoes with a vegetable cutter, into little balls the size of marbles.
  3. Cook them in boiling salted water until tender, drain and dry carefully.
  4. While warm mix them with the mayonnaise.
  5. Pour the potato balls in the center of a salad dish, sprinkle over them chopped parsley.
  6. Garnish with a border of pickled beets, which have been cut into points.
