Portuguese Prune Soup Recipe

Ingredients for Portuguese Prune Soup Recipe

  • 8 prunes
  • Water
  • 3 leeks
  • Salt and pepper
  • Toast

Instructions

  1. Soak prunes in cold water overnight.
  2. In the morning, drain the prunes. Add to the water in which they were soaked enough stock to make a quart and leeks cut in two-inch pieces.
  3. Simmer until tender, then put in the prunes and season with salt and pepper.
  4. Serve hot with strips of toast.

Serves 4 people .
