Ingredients for Poached Eggs With Asparagus Recipe 1

  • 1 small bunch hot, boiled asparagus
  • 2-3 slices toast
  • 3/4 cup white, Bechamel, or drawn butter sauce
  • 1 poached egg

Instructions

  1. Place the asparagus on the toast with the heads all the same way.
  2. Pour the sauve over the asparagus and add the poached egg on top.
  3. For variety, substitute cooked celery (stalks, cut in inch lengths), peas, string beans, chicken, fish, etc., for the asparagus.
  4. All of these should be stirred into the sauce and then set in place on the toast.
