Ingredients for Poached Eggs With Asparagus Recipe 1
- 1 small bunch hot, boiled asparagus
- 2-3 slices toast
- 3/4 cup white, Bechamel, or drawn butter sauce
- 1 poached egg

Instructions
- Place the asparagus on the toast with the heads all the same way.
- Pour the sauve over the asparagus and add the poached egg on top.
- For variety, substitute cooked celery (stalks, cut in inch lengths), peas, string beans, chicken, fish, etc., for the asparagus.
- All of these should be stirred into the sauce and then set in place on the toast.
