Ingredients for A Pilau Of Chicken Recipe

  • Chicken, approximately 3.5 pounds
  • 1/2 cup olive oil
  • Juice of one lemon
  • Salt and pepper to taste
  • 1 onion, sliced
  • 3 tablespoons butter
  • 1 cup weak chicken stock
  • 1 cup tomato juice
  • 3/4 cup rice
  • Parmesan cheese, grated

Instructions

  1. Wash the chicken and cut into serving pieces.
  2. Mix oil, lemon juice, and salt and pepper to taste. Pour over chicken pieces and marinade for an hour.
  3. Fry onion in 3 tablespoons of butter until slightly browned.
  4. Add the chicken to the pan and fry with the onions for ten minutes, turning often.
  5. Empty the contents of the frying-pan into a broad-bottomed pot; pour in stock and tomato juice.
  6. Cook gently over low heat until the chicken is tender, then remove chicken from the pan.
  7. Return the gravy to the fire and add rice.
  8. Cook over medium-high heat for approximately 25 minutes or until the rice is soft, then put the chicken back into the pot. Mix well, and heap upon a heated platter and sprinkle Parmesan cheese over the top.
