Ingredients for A Pilau Of Chicken Recipe
- Chicken, approximately 3.5 pounds
- 1/2 cup olive oil
- Juice of one lemon
- Salt and pepper to taste
- 1 onion, sliced
- 3 tablespoons butter
- 1 cup weak chicken stock
- 1 cup tomato juice
- 3/4 cup rice
- Parmesan cheese, grated

Instructions
- Wash the chicken and cut into serving pieces.
- Mix oil, lemon juice, and salt and pepper to taste. Pour over chicken pieces and marinade for an hour.
- Fry onion in 3 tablespoons of butter until slightly browned.
- Add the chicken to the pan and fry with the onions for ten minutes, turning often.
- Empty the contents of the frying-pan into a broad-bottomed pot; pour in stock and tomato juice.
- Cook gently over low heat until the chicken is tender, then remove chicken from the pan.
- Return the gravy to the fire and add rice.
- Cook over medium-high heat for approximately 25 minutes or until the rice is soft, then put the chicken back into the pot. Mix well, and heap upon a heated platter and sprinkle Parmesan cheese over the top.
