Pickled Beets

Ingredients for Pickled Beets Recipe
- 3-4 lbs small beets
- 2 cups sugar
- 2 cups water
- 2 cups vinegar
- 1 teaspoon allspice
- 1 thinly sliced lemon
- 1 tablespoon cinnamon
- 1 teaspoon cloves
Instructions
- Cook beets until soft.
- Remove skins from beets and slice into round, even pieces.
- Combine the sugar, water, and vinegar. After stirring well, spoon in the lemon and spices.
- Pour over the beets and bring to a boil, then simmer for 15 minutes.
- Serve or pack into canning jars.
