Pickled Beets

Ingredients for Pickled Beets Recipe

  • 3-4 lbs small beets
  • 2 cups sugar
  • 2 cups water
  • 2 cups vinegar
  • 1 teaspoon allspice
  • 1 thinly sliced lemon
  • 1 tablespoon cinnamon
  • 1 teaspoon cloves

Instructions

  1. Cook beets until soft.
  2. Remove skins from beets and slice into round, even pieces.
  3. Combine the sugar, water, and vinegar. After stirring well, spoon in the lemon and spices.
  4. Pour over the beets and bring to a boil, then simmer for 15 minutes.
  5. Serve or pack into canning jars.
