Peppermint Candy Cookies

Peppermint candy cookies are a triple treat with a creamy filling and a tasty cookie dusted with crushed peppermint candy.

Peppermint Candy Cookies

There are three parts to this cookie recipe, which I have broken down into the dough, the coating, and the filling. If you make the cookie dough first, you will have plenty of time to get the coating and filling ready before the dough has chilled.

Ingredients

The dough

  • 2 sticks of butter
  • ½ cup confectioner’s sugar
  • 1 teaspoon vanilla
  • ½ cup walnuts

Instructions

  1. Beat the butter and sugar together until light and fluffy.
  2. Add the vanilla and mix until combined.
  3. Add the flour and mix until combined.
  4. Add the walnuts and then turn the dough out onto your work surface.
  5. Wrap in plastic wrap and let chill for one hour.
  6. Meanwhile, make the coating and filling.

The Coating

Ingredients

  • ¼ pound of peppermint candy, crushed fine
  • ½ cup of confectioner’s sugar

Instructions

  1. Mix thoroughly in a bowl.

The Filling

Ingredients

  • 2 tablespoons cream cheese
  • 1 teaspoon milk
  • 1 drop of red food coloring
  • ½ cup confectioner’s sugar
  • 3 tablespoons coating mixture

Instructions

  1. Mix the cream cheese, milk, food coloring, and confectioner’s sugar together using a stand mixer.
  2. Add three tablespoons of the coating mix.

Assembling the Cookies

Instructions

  1. Preheat your oven to 350 degrees.
  2. Remove the dough from the refrigerator.
  3. Form a ball of dough about 1-inch across.
  4. Using your thumb push a depression into the center of the dough ball
  5. Fill the depression with ¼ teaspoon of the filling mixture.
  6. Roll the dough ball to seal it.
  7. Do this with the remaining dough.
  8. Place the dough balls on a cookie sheet that has been lined with a sheet of parchment paper.
  9. Bake for 10-12 minutes.
  10. Remove the cookies from the oven and let cool.
  11. Once the cookies are cool enough to handle, roll each cookie in the coating mixture.
