Ingredients for Pear conde (poire conde) 4 PORTIONS Recipe
- Rice (short-or whole-grain) 75g(3oz)
- Milk (either whole or skim) 0.5ltr(1pt)
- Sugar (Caster or refined) 50g(2oz)
- Vanilla essence (extract) or pod 3-4 Drops
- Ripe dessert pears 2
- Apricot glaze 125ml(1/4pt)
- Angelica 10g(0.5oz)
- Glace Cherries 2

Instructions
- Cook the rice in the milk; sweeten and flavor it, then allow it to cool.
- Peel, core and halve the pears; poach them carefully and leave them to cool.
- Dress the rice either in a glass bowl, on individual plates or a flat dish
- Drain the pears and neatly arrange them on top
- Coat with apricot glaze; decorate with Angelica and cherries
Note: Many fruits may be prepared as a conde, including banana, pineapple and peach. The rice may also be enriched with 10g(0.5oz)butter or margarine and an egg yolk.
For 10 servings, increase quantities 2 1/2 times.
