Ingredients for Parisian Soup Recipe

  • 4-5 leeks
  • 1 tablespoon butter
  • 1 quart mutton or beef stock
  • Salt and pepper
  • 6 preboiled potatoes, sliced
  • Croutons

Instructions

  1. Cut leeks into strips and fry in a little butter.
  2. Add to them a quart of good mutton stock; add salt and pepper to taste.
  3. Add potatoes cut into slices and boil all together until the leeks are thoroughly cooked.
  4. Serve in a tureen with croutons strewn over the top.
