Instructions

  1. Parfaits are the richest desserts that can be made.
  2. A white parfait is made with a syrup added to beaten egg whites and combined with whipped cream.
  3. Angel Parfait
  4. 1/3 cup sugar and 4 tablespoons water in saucepan, stir until sugar is dissolved and boil until syrup spins a thread when dropped from tip of spoon.
  5. Remove from fire and beat 2 egg whites until stiff.
  6. Add syrup slowly continuing to beat mixture until light and fluffy.
  7. Chill, stirring occasionally.
  8. Beat 1/2 pint cream until thick, add 1-1/2 teaspoons vanilla, then beat in egg mixture with a few turns of the egg beater.
  9. Freeze.
  10. Marshmallow Parfait
