Ingredients for Pancakes A La Creme Recipe
- 1/2 of a small, fresh lemon
- 3-4 sugar lumps (more if needed)
- Pinch of cinnamon
- Pinch of salt
- 1 oz. flour
- 1 oz. butter
- Splash of cold milk
- 1/2 pint thick cream
- 2 egg whites
- 4 egg yolks
Instructions
- Rub the rind of the lemon with the lumps of sugar until the yellow part is all taken off, then crush the sugar to powder.
- Mix lemon-sugar with cinnamon, salt, and flour.
- Add cold milk and butter to make a smooth paste.
- Gradually stir in cream and the well-whisked egg yolks and whites.
- Fry the pancakes very quickly (3-4 minutes) on a greased griddle and serve them as hot as possible; cakes will be very thin.
Sufficient for four or five persons.
