Ingredients for Oyster Soup, Amsterdam Style Recipe

  • 1 quart oysters
  • ½ teaspoon salt
  • Water
  • Paprika
  • 3 tablespoons butter
  • Celery salt
  • 3½ tablespoons flour
  • 1 cup cream

Instructions

  1. Clean, pick over, chop, and parboil oysters.
  2. Drain, strain through cheesecloth, and add enough water to oyster liquor to make one quart liquid.
  3. Brown butter, add flour, and pour oyster liquor on gradually while stirring constantly.
  4. Let simmer one-half hour.
  5. Season with salt, paprika, and celery salt, and, just before serving, add cream.
