Ingredients for Oyster Omelet Recipe 1

  • 3 eggs
  • 6 medium sized oysters
  • Pepper and lemon juice to season

Instructions

  1. Cook the oysters in their own liquor until they curl.
  2. Drain and chop them quite fine; season with pepper and a very little lemon juice.
  3. Add them to a plain omelet just before folding it.
  4. Small oysters may be cooked in the same way, using a sufficient number for the omelet and lay them whole across the omelet and fold over and serve.
