Ingredients for Overnight Stuffed Apricot French Toast Recipe
- 1 loaf French bread, sliced into 1 inch slices
- 2 ounces cream cheese, softened
- 1/4 cup apricot spreadable fruit, jam or preserves
- 4 eggs, lightly beaten
- 1 cup half-and-half
- 1 teaspoon cinnamon
- 1 teaspoon sugar

Instructions
- Combine cream cheese and apricot jam in a mixing bowl; beat lightly to mix.
- Slice halfway into each piece of bread and use your fingers to create a small pocket.
- Combine eggs, half and half, cinnamon, and sugar; mix well. Set aside.
- Divide the cream cheese mixture equally between the bread slices; use to fill pockets.
- Put bread in a single layer in a greased pan.
- Pour egg mixture over the bread. Cover and refrigerate overnight.
- Make covered, for 30 minutes at 350 degrees.
- Uncover and bake further 30 minutes, or until bread is lightly browned and cooked through.
