Ingredients for Overnight Stuffed Apricot French Toast Recipe

  • 1 loaf French bread, sliced into 1 inch slices
  • 2 ounces cream cheese, softened
  • 1/4 cup apricot spreadable fruit, jam or preserves
  • 4 eggs, lightly beaten
  • 1 cup half-and-half
  • 1 teaspoon cinnamon
  • 1 teaspoon sugar

Instructions

  1. Combine cream cheese and apricot jam in a mixing bowl; beat lightly to mix.
  2. Slice halfway into each piece of bread and use your fingers to create a small pocket.
  3. Combine eggs, half and half, cinnamon, and sugar; mix well. Set aside.
  4. Divide the cream cheese mixture equally between the bread slices; use to fill pockets.
  5. Put bread in a single layer in a greased pan.
  6. Pour egg mixture over the bread. Cover and refrigerate overnight.
  7. Make covered, for 30 minutes at 350 degrees.
  8. Uncover and bake further 30 minutes, or until bread is lightly browned and cooked through.
