Ingredients for Orange Pie Recipe 3

  • Shortening-based pastry crust
  • 3 eggs, separated
  • 1 C sugar (for filling)
  • 3 Tbsp. sugar (for meringue)
  • 1 Tbsp. cornstarch
  • 2/3 C milk
  • Juice and grated rind from 1 orange
  • 1 tsp. orange extract

Instructions

  1. Line pie tin with pastry.
  2. Beat egg yolks with 1 cup sugar till light; add 1 tablespoon cornstarch, 2/3 cup milk, grated rind and strained juice of 1 orange.
  3. Place in double boiler and stir till thickened, then pour into crust and bake 30 minutes at 350 degrees.
  4. Cover top with meringue made with whites of eggs and sweetened with 3 tablespoons sugar and flavored with 1 teaspoon orange extract.
  5. Place in oven to brown.
