Ingredients for Orange Pie Recipe 3
- Shortening-based pastry crust
- 3 eggs, separated
- 1 C sugar (for filling)
- 3 Tbsp. sugar (for meringue)
- 1 Tbsp. cornstarch
- 2/3 C milk
- Juice and grated rind from 1 orange
- 1 tsp. orange extract
Instructions
- Line pie tin with pastry.
- Beat egg yolks with 1 cup sugar till light; add 1 tablespoon cornstarch, 2/3 cup milk, grated rind and strained juice of 1 orange.
- Place in double boiler and stir till thickened, then pour into crust and bake 30 minutes at 350 degrees.
- Cover top with meringue made with whites of eggs and sweetened with 3 tablespoons sugar and flavored with 1 teaspoon orange extract.
- Place in oven to brown.
