Orange Food Recipe

Instructions

  1. Peel and carefully remove the skin from six large oranges; cut them in slices and place in the double boiler with a tiny pinch of baking soda and a cup of sugar (more if the oranges are very tart), cook for twenty minutes, and press through a sieve.
  2. Allow this to become thoroughly chilled in the ice box, and at serving time add the stiffly whipped whites of two eggs beaten with two tablespoons of sugar and then very gradually half a pint of whipped cream.
  3. Arrange on a large round of sponge cake, with ladyfingers inclosing the sides, fastened in place with a little orange frosting; each finger surmounted by a crystallized cherry.
