Ingredients for Onion Soup Gratinee Recipe

  • 3 onions
  • 3 tablespoons butter
  • 3 pints beef stock
  • 3 tablespoons grated cheese
  • Pepper and salt
  • 1/8 clove garlic (if desired)
  • 2 tablespoons chopped parsley
  • ¼ loaf French bread

Instructions

  1. Slice onions and put them into a stewpan with butter.
  2. Stir and fry slowly until softened and slightly browned.
  3. Add beef stock, boil ten minutes, and skim. Season and add parsley and garlic.
  4. Cut the bread into thin slices, dry in the oven a few minutes, pour soup into a low earthen casserole, put bread on top, sprinkle with grated cheese, and set in a very hot oven just long enough to brown the cheese.

This is a classic French onion soup recipe. .
