Ingredients for Onion Omelet Recipe
- 6 eggs
- 1 large Spanish onion
- 1 tablespoon butter
- A pinch of salt and a dash of pepper
- Finely minced parsley to taste

Instructions
- Dice the onion and fry it in a spoonful of butter until tender, stirring it often.
- Do not let it brown.
- Take a small amount of salt and a dash of pepper and beat them into the yolks of the eggs.
- Proceed as in directions for a plain omelet, folding in the whites of the eggs.
- When it is nearly cooked, sprinkle over the top a teaspoon of finely minced parsley.
- Cook in two omelets.
- Serve with it French fried, Lyonnaise, or baked potatoes with a cream sauce.
