Ingredients for Omelet With Peas Recipe

  • 1 plain omelet
  • 1 pint freshly cooked green peas or 1 can drained peas
  • Salt and pepper
  • 2 teaspoons rich cream

Instructions

  1. Make a plain omelet with 6 eggs.
  2. Heat the peas and season with salt and pepper.
  3. When the omelet has set and is ready to fold over, put 2 or 3 spoonfuls of the peas in the center. Fold over as usual and place on a hot platter.
  4. Add the cream to the remaining peas; let it heat quickly and pour around the omelet.
  5. Serve at once.
  6. The cream may be omitted and the peas served dry, with plenty of butter over.
