Ingredients for Oatmeal Raisin Muffins (with Yeast) Recipe

  • 1 compressed yeast cake
  • 1/4 lukewarm water
  • 1 pint scalded milk
  • 1 cup rolled oats
  • 1/4 cup corn oil
  • 1/2 cup corn syrup
  • 1 teaspoon salt
  • 2 cups bread flour
  • 2 cups entire wheat flour
  • 1 cup raisins

Makes 3 to 4 dozen - will keep

Instructions

  1. Put the oats, corn oil, salt, and corn syrup in a bowl. On top, pour the scalded milk.
  2. Dissove the yeast in the lukewarm water and add it to the bowl when the above mixture cools.
  3. Beat in the flour and raisins. Let rise until double in size.
  4. Fill muffin pans halfway. Bake from 35-40 minutes in a moderate oven, 350 to 375 degrees F.
  5. The raisins may be omitted or replaced with chopped figs, dates, or nuts.
