Ingredients for Oatmeal Raisin Muffins (with Yeast) Recipe
- 1 compressed yeast cake
- 1/4 lukewarm water
- 1 pint scalded milk
- 1 cup rolled oats
- 1/4 cup corn oil
- 1/2 cup corn syrup
- 1 teaspoon salt
- 2 cups bread flour
- 2 cups entire wheat flour
- 1 cup raisins
Makes 3 to 4 dozen - will keep

Instructions
- Put the oats, corn oil, salt, and corn syrup in a bowl. On top, pour the scalded milk.
- Dissove the yeast in the lukewarm water and add it to the bowl when the above mixture cools.
- Beat in the flour and raisins. Let rise until double in size.
- Fill muffin pans halfway. Bake from 35-40 minutes in a moderate oven, 350 to 375 degrees F.
- The raisins may be omitted or replaced with chopped figs, dates, or nuts.
