Ingredients for Oatmeal Bread Recipe 1

  • 1 yeast cake
  • ½ cup lukewarm water
  • 2 cups boiling water
  • 2 cups rolled oats
  • ¼ cup brown sugar
  • 2 tablespoons shortening or butter, melted
  • 4 cups sifted flour
  • 1 teaspoon salt

Instructions

  1. Pour boiling water over oatmeal. Cover and let stand until lukewarm.
  2. Dissolve yeast and sugar in 1/2 cup lukewarm water. Add shortening to yeast and add this mixture to the oatmeal and water.
  3. Add one cup of flour or enough to make an ordinary sponge.
  4. Beat well.
  5. Cover and set aside in a moderately warm place to rise for one hour or until light.
  6. Add enough flour to make a dough--about three cups--and the salt.
  7. Knead well.
  8. Place in greased bowl, cover, and let rise in a moderately warm place, until double in bulk, about 1 1/2 hours.
  9. Mold into loaves, fill well-greased pans half full, cover, and let rise again about one hour.
  10. Bake forty-five minutes at 425 degrees.
