Ingredients for Oatmeal And Mushroom Soup Recipe

  • 3 tablespoons butter
  • 1 medium-sized onion
  • ½ cup oatmeal
  • 1 teaspoon salt
  • 1 quart water
  • 1 pint milk
  • ½ cup chopped mushrooms

Instructions

  1. Peel the onion, and chop finely.
  2. Place in the inner portion of the double boiler with the butter, and cook fifteen to twenty minutes.
  3. Then add the oatmeal and the boiling water.
  4. Cook directly over the flame for about ten minutes.
  5. Then place in the double boiler, and cook from two to three hours.
  6. Rub through a colander, and add the milk.
  7. When thoroughly heated, add the chopped mushrooms and salt.
  8. The mushrooms are somewhat improved in flavor by broiling a few minutes before adding to the soup.
  9. If desired, a spoon of whipped cream may be added to each serving.
