Ingredients for Noodle Soup Recipe
- 1 cup lima beans
- 1 small onion
- 1 carrot
- 1 stalk celery
- 7 cups cold water
- 1 tablespoon butter
- 2 teaspoons salt
- Chopped parsley

Noodle Ingredients
- 1 egg yolk
- 1 tablespoon milk
- salt
- 2/3 cup white flour

Instructions
- Chop vegetables into small pieces. Place them in a saucpan with the water and butter and let boil gently until the beans are done.
- To prepare the noodles, add milk to the yolk of an egg and a sprinkle of salt. Mix well.
- Add the flour (add extra if needed to make a stiff dough) and roll out on a well floured board to the thickness of paper.
- Let dry for a few minutes, then cut into strips 1/4 inch in width.
- Pile these and shred crosswise into very fine shreds.
- Sprinkle into the boiling bean soup, having first removed the vegetables, and let boil gently for 15 minutes.
- Add a little chopped parsley, salt to taste, and serve.
