Instructions
- Wipe six Frenched chops cut one and one-half inches thick.
- Split the meat on them in halves, cutting clear to the bone.
- Cook together till delicately browned one tablespoon of onion and one and a half tablespoons of butter; remove the onion, add half a cup of chopped mushrooms, and cook five minutes; then add two tablespoons of flour, three tablespoons of brown stock, one teaspoon of chopped parsley, and seasoning of salt and cayenne.
- Spread this mixture between the chops, press them lightly together, wrap in buttered paper cases and broil over a clear fire, moving constantly, for ten minutes.
- Serve with espagnole sauce.
