Ingredients for Mushrooms Au Gratin

  • 4 tablespoons vegetable shortening
  • 14 large mushrooms
  • 1 egg
  • Salt, pepper, and red pepper to taste
  • 1 tablespoon chopped parsley
  • 2 tablespoons chopped cooked meat
  • 2 tablespoons breadcrumbs
  • ½ cup stock
  • 1 tablespoon chopped suet

Instructions

  1. Beat up egg, add suet, breadcrumbs, meat, parsley, and seasonings.
  2. Wash and remove centers from mushrooms, season with salt, pepper, and red pepper, also place tiny piece of vegetable shortening in each.
  3. Then put heaping teaspoon of forcemeat in each one, and cover with crumbs.
  4. Lay on vegetable shorteninged tin, add stock, and bake fifteen minutes.
  5. Serve on hot dish with gravy poured round.
  6. Sufficient for fourteen mushrooms.
